Skinny Caesar Dressing

Yield: 8 servings (about 16 Tbsp)

 

⅔ cup organic fat-free Greek yogurt

2 Tbsp lemon juice

1 Tbsp paleo, avocado oil-based mayonnaise (such as Primal Kitchen)

1 Tbsp Dijon mustard

2 to 3 anchovies in oil

½ tsp sea salt

¼ tsp black pepper

¼ cup shredded Parmesan cheese (optional)

Pinch garlic powder (optional)

 

Blend everything in a mini blender until smooth. Serve over butter lettuce with cucumbers, shredded carrots and bell peppers, or use as a dip for veggies.
